Buffalo Cauliflower Bites

Ingredients
1 medium head cauliflower, cut into bite-size florets
Batter
1/2 cup whole wheat flour
1 teaspoon garlic powder
1/4 teaspoon salt
1/2 cup water
Buffalo Sauce
2-4 tablespoons hot sauce (I used Frank’s Red Hot Original)
1 tablespoon coconut oil, melted

Instructions
Preheat oven to 450 degrees. Line a baking sheet with aluminum foil and place an oven-safe rack on top. Grease the rack with oil.
In a medium bowl, combine flour, garlic powder and salt. Whisk in water until smooth.
Add cauliflower to bowl and toss until each piece is coated in batter. Spoon cauliflower onto prepared rack in a single layer.

Bake for 20 minutes until batter is set.
While cauliflower bakes, mix together melted coconut oil and hot sauce.

Remove cauliflower from oven and toss with buffalo sauce until each piece is evenly coated.

Return to rack and bake for another 10-20 minutes, until cauliflower begins to brown. The time will vary depending on your oven.
Cool slightly before serving.
