Quinoa ScrambleIngredients4 cups fresh spinach6 eggs1 tbsp. Olive oil1 onion diced1 Cup cooked QuinoaSalt and pepper to taste Blend eggs and spinach. Pour olive oil into a large frying pan. Add onion and cook on medium heat until soft. Add remaining ingredients to frying pan including blended spinach and eggs. Stir while cooking (like you would when cooking scrambled eggs). Kale Soup INGREDIENTS:•1 cup uncooked quinoa, rinsed thoroughly•2 (14.5-ounce) cans petite diced tomatoes•1 (15-ounce) can Great Northern beans, drained and rinsed•1 onion, diced•3 cloves garlic, minced•1/2 teaspoon dried oregano•1/2 teaspoon dried basil•1/4 teaspoon dried rosemary•1/4 teaspoon dried thyme•2 bay leaves•4 cups vegetable broth•Kosher salt and freshly ground black pepper, to taste•1 bunch kale, stems removed and leaves choppedDIRECTIONS:1.)
